Ingredients

  • 1 lb ground beef (or turkey)
  • 1 medium onion, diced
  • 3 cups beef broth
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 cup chopped carrots
  • 1/2 cup of sour cream
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add the ground beef. Cook for about 5-7 minutes until it’s no longer pink.
  2. Stir in the diced onions and sauté for 3-4 minutes until they become translucent.
  3. Add the beef broth, diced potatoes, carrots, and Worcestershire sauce to the pot. Stir well and bring to a bubble.
  4. Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for 15-20 minutes.
  5. Add the shredded cheddar cheese and milk, stirring until the cheese has melted.
  6. Stir in the sour cream until fully incorporated and heat through for another couple of minutes.
  7. Ladle the soup into bowls and top with desired garnishes like green onions or bacon bits.

Notes

Optional toppings include crispy bacon, fresh herbs, or zesty pickles. Serve with garlic bread or a mixed green salad for a complete meal.
