Ingredients

  • 2 cups mixed vegetables (spinach, bell peppers, zucchini)
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 package rolled dough (store-bought or homemade)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until fragrant (3-4 minutes).
  3. Add mixed vegetables and cook for an additional 5-7 minutes until tender.
  4. Mix the sautéed vegetables with mozzarella and Parmesan cheese in a mixing bowl.
  5. Roll out the dough into a rectangle on a floured surface, about ¼ inch thick.
  6. Cut the dough into squares, place a spoonful of the filling in the center of each, fold and seal the edges.
  7. Place rolls on a greased baking tray and bake for 20-25 minutes until golden brown.
  8. Cool before serving.

Notes

These rolls can be prepared ahead of time and stored in the fridge or freezer. They can also be made in a slow cooker or air fryer.
