  • 1 pound ground beef
  • 8 flour tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 pinch garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned, about 5 to 7 minutes. Drain excess fat.
  3. Add cumin, chili powder, and garlic powder to the beef. Stir and cook for another 2-3 minutes.
  4. Place 2-3 tablespoons of the beef mixture and cheese in each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the tortillas and top with remaining cheese.
  6. Bake for 25-30 minutes or until cheese is melted and bubbly.
  7. Let sit for 5 minutes before serving with toppings like sour cream or avocado.
