Ingredients

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar for about 3-4 minutes until light and fluffy.
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined.
  5. Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes until the edges are golden but the centers look slightly underbaked.
  7. Remove from the oven and let cool for about 5 minutes on the baking sheet before transferring to a wire rack.

Notes

For variations, try adding chocolate chips or rolling the dough in cinnamon sugar before baking. Store cookies in an airtight container for up to a week.
