  • 1 ripe avocado
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 4 slices of bread (sourdough or whole grain)
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Start by gathering your ingredients. If using leftover chicken, dice it into bite-sized pieces. Slice your avocado in half, remove the pit, and scoop out the flesh, mashing it lightly in a bowl. Season with a pinch of salt and pepper.
  2. Lay out your slices of bread on a clean surface. On two slices, spread an even layer of mashed avocado. Top with the cooked chicken and sprinkle the shredded cheese generously on top. Place the other slices of bread on top to create your sandwich.
  3. Place a skillet over medium heat and add one tablespoon of butter. Let it melt and coat the pan.
  4. Once the butter is sizzling, carefully place your sandwich in the skillet. Cook for about 3-4 minutes, or until the bread turns golden brown, checking to avoid burning.
  5. Using a spatula, grasp one side of the sandwich and gently lift it. Flip it over carefully to cook the other side, adding another tablespoon of butter to the skillet if needed.
