Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets, fresh or frozen
  • 1 can cream of chicken soup (or homemade alternative)
  • 1 cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs or crushed crackers for topping
  • Cooking spray or oil

Instructions

  1. Prep the Base: If using fresh broccoli, steam for about 3 minutes until slightly tender and bright green.
  2. Combine Ingredients: In a large mixing bowl, combine the cooked chicken, broccoli, cream of chicken soup, sour cream, garlic powder, onion powder, salt, pepper, and shredded cheese. Stir until well mixed.
  3. Prepare the Cooker: If using a slow cooker, spray the inside with cooking spray. For an air fryer, preheat to 350°F (175°C).
  4. Add Mixture: Pour the chicken and broccoli mixture into the slow cooker or air fryer basket, spreading it out evenly.
  5. Top It Off: Sprinkle breadcrumbs or crushed crackers and additional cheese over the top for a crunchy finish.
  6. Cook: Slow Cooker: Cook on low for 4-5 hours or on high for 2-3 hours. Air Fryer: Cook for 20-25 minutes or until bubbly and golden brown on top.
  7. Serve: Allow to cool slightly before serving, and enjoy your chicken and broccoli casserole warm!
