  • 2 cups cooked chicken (shredded or diced)
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 1 can black beans (rinsed and drained)
  • 1 cup corn (frozen or canned)
  • 1 cup salsa (medium or mild)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 8 corn tortillas (cut into strips)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, bell pepper, onion, black beans, corn, salsa, chili powder, cumin, salt, and pepper. Mix well.
  3. Grease a 9×13-inch baking dish. Spread half of the tortilla strips on the bottom, then layer half of the chicken mixture on top.
  4. Sprinkle half of the shredded cheese over the chicken mixture.
  5. Repeat the process with the remaining tortilla strips, chicken mixture, and finish with the remaining cheese.
  6. Cover the casserole with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  7. Remove from the oven and let it cool for a few minutes before serving.
