  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes, with juices
  • 1 cup corn (frozen or canned)
  • 1 tablespoon taco seasoning (adjust to taste)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, or lime wedges

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, bell pepper, onion, black beans, diced tomatoes, corn, taco seasoning, salt, and pepper. Mix well.
  3. Spread the mixture evenly in a greased 9×13 inch baking dish.
  4. Top with dollops of sour cream and sprinkle cheese evenly over the top.
  5. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  6. Garnish with your favorite toppings before serving. Enjoy with warm tortillas or over rice!

Notes
