Ingredients

  • 1 pound of boneless, skinless chicken breast
  • 1 pound of refrigerated gnocchi
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 2 cups of fresh baby spinach
  • 1 cup of diced carrots
  • 1 cup of heavy cream
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat and add the chicken. Cook for 5-7 minutes until browned and fully cooked.
  3. Add minced garlic and diced carrots to the skillet and cook for an additional 2-3 minutes.
  4. Toss in the gnocchi and cook until slightly golden on the edges.
  5. Pour in heavy cream and Italian seasoning, stir, and let simmer for around 5 minutes.
  6. Add the fresh spinach just before serving and stir until wilted.
  7. Adjust seasoning to taste and serve hot.

Notes

For a lighter option, consider using half-and-half or coconut milk instead of heavy cream.
