Ingredients

  • 8 oz. Lo Mein Noodles
  • 1 lb. Chicken Breast, thinly sliced
  • 2 cups Mixed Vegetables (carrots, bell peppers, broccoli)
  • 4 cloves Garlic, minced
  • 2 tbsp. Soy Sauce
  • 1 tbsp. Oyster Sauce
  • 1 tsp. Sesame Oil
  • Salt and Pepper, to taste

Instructions

  1. In a large pot, bring water to a boil. Add the Lo Mein noodles and cook according to package instructions, about 5-7 minutes. Drain and rinse under cold water.
  2. While the noodles are cooking, slice the chicken breast into thin strips and optionally marinate with salt and cornstarch for 10 minutes.
  3. In a large skillet over medium-high heat, add oil and sauté mixed vegetables for 3-4 minutes until softened.
  4. Push vegetables to the side, add chicken to the skillet, and stir-fry for 5-6 minutes until cooked through.
  5. Stir in garlic, soy sauce, oyster sauce, and sesame oil. Toss everything to combine.
  6. Add the cooked noodles to the skillet and toss gently for 2-3 minutes until heated through.
  7. Season with salt and pepper to taste. Serve hot, garnished as desired.

Notes

This flexibly cooked dish can be made with shrimp or tofu as a protein variant. Consider serving with spring rolls or salad.
