Instructions

  1. Pound the chicken breasts between two sheets of plastic wrap until they are about ½ inch thick.
  2. Set up a breading station with flour, beaten eggs, and a breadcrumb mixture of breadcrumbs, Parmesan, garlic powder, salt, and pepper.
  3. Dredge each chicken breast in flour, dip in egg wash, and coat with the breadcrumb mixture.
  4. Heat about ¼ inch of olive oil in a large skillet over medium heat until shimmering.
  5. Carefully place the breaded chicken in the skillet, cooking for 3-4 minutes on each side until golden brown and cooked through.
  6. Transfer cooked chicken to a paper towel-lined plate to drain off excess oil.
