Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 medium zucchinis, sliced thinly
  • 2 medium yellow squashes, sliced thinly
  • 1 cup cream of chicken soup
  • 1 cup shredded cheese (Cheddar or mozzarella)
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 teaspoon Italian seasoning
  • Cooking spray or olive oil for greasing

Instructions

  1. Spray the inside of your slow cooker or air fryer basket with cooking spray or lightly coat with olive oil.
  2. In a large mixing bowl, combine the cream of chicken soup, milk, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir until well blended.
  3. Layer half of the sliced zucchini and squash into the bottom of the cooking dish. Add half of the cooked chicken over the veggies, followed by half of the sauce mixture. Repeat with remaining ingredients.
  4. Top the casserole with the shredded cheese evenly across the top.
  5. For slow cooker: Cook on low for 4 hours or high for 2 hours. For air fryer: Cook at 350°F (175°C) for 25-30 minutes, checking for doneness.
  6. Ensure the chicken is heated through and the veggies are tender before removing.
  7. Let cool for a few minutes, then serve.

Notes

Great to serve with garlic bread, salad, quinoa, or rice. Can be customized with different veggies or cheese.
