Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 medium sweet potato, peeled and roughly chopped
  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Olive oil for frying or air frying

Instructions

  1. Boil or steam the chopped sweet potato for 10-15 minutes until tender. Drain and let cool slightly.
  2. In a large mixing bowl, partially mash the chickpeas with a fork or potato masher, leaving some chunks for texture.
  3. Add the cooked sweet potatoes, breadcrumbs, onion, garlic, cumin, smoked paprika, salt, and pepper to the chickpeas. Mix until well combined.
  4. Form the mixture into small patties (about 2-3 inches wide) and set aside on a plate.
  5. For frying, heat a non-stick skillet with olive oil over medium heat and cook fritters for about 4-5 minutes on each side until golden brown.
  6. For air frying, preheat the air fryer to 375°F (190°C), place fritters in a single layer, and cook for about 10-12 minutes, flipping halfway through.
  7. Serve warm with your favorite dipping sauce like tzatziki or hummus.

Notes

Leftover fritters can be stored in an airtight container in the fridge for up to 3 days. They can also be frozen uncooked for up to 3 months.
