Ingredients

  • 1 pound ground beef (or ground turkey/lentils)
  • 1 can (15 oz) chili beans
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 32 oz frozen tater tots
  • 1 packet taco seasoning
  • Optional toppings: sour cream, green onions, jalapeños

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, brown the ground beef over medium heat for 5-7 minutes. Drain excess fat.
  3. Stir in chili beans, diced tomatoes, and taco seasoning. Simmer for 3-5 minutes.
  4. Pour the mixture into a greased casserole dish.
  5. Layer the tater tots on top of the chili mixture.
  6. Sprinkle shredded cheese over the tater tots.
  7. Bake in the preheated oven for 30-35 minutes until tater tots are golden and cheese is bubbly.

Notes

For a vegetarian option, use lentils instead of beef. Serve with sour cream or chopped green onions for added flavor.
