Ingredients

  • 2 ripe avocados (make sure they are soft)
  • 1 cup dark chocolate chips (or your favorite chocolate, dairy-free if needed)
  • 3 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Cocoa powder, chopped nuts, or shredded coconut for rolling (optional)

Instructions

  1. In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in-between until smooth and glossy.
  2. Scoop the flesh of the ripe avocados into a food processor.
  3. Add the melted chocolate, maple syrup, vanilla extract, and sea salt to the food processor. Blend until the mixture is creamy and well combined.
  4. Transfer the mixture to a bowl, cover it with plastic wrap, and refrigerate for about 30 minutes to firm up.
  5. Once chilled, use a small scoop or your hands to form bite-sized balls.
  6. Roll the truffles in cocoa powder, nuts, or coconut if desired.
  7. Enjoy immediately or refrigerate in an airtight container for up to a week.
