Ingredients

Scale
  • 2 medium ripe bananas
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream, for brushing (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mash the bananas in a large bowl until smooth, then add the vanilla extract and set aside.
  3. In another bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Cut in the butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Fold the banana mixture and chocolate chips into the dry ingredients, being careful not to overmix.
  6. Transfer the dough to a floured surface and gently knead it a few times. Pat it into a circle about 1 inch thick, then cut into wedges or use a round cutter.
  7. Place on the baking sheet, brush with heavy cream if desired, and bake for 15-20 minutes or until golden brown.

Notes

Use very ripe bananas for maximum flavor and sweetness. Try different types of chocolate for variations.
