Ingredients

  • 1 cup chocolate cookie crumbs
  • 1 cup shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Additional coconut or nuts (optional)

Instructions

  1. In a large mixing bowl, combine chocolate cookie crumbs, shredded coconut, sweetened condensed milk, and vanilla extract.
  2. Using your hands, scoop out approximately one tablespoon of the mixture and roll it into a ball.
  3. Place the rolled truffles on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes.
  4. In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring in between.
  5. Dip each chilled truffle into the melted chocolate and return to the baking sheet.
  6. If desired, roll some truffles in additional shredded coconut or chopped nuts.
  7. Refrigerate the coated truffles until the chocolate hardens, approximately 15-20 minutes.

Notes

These truffles can be made ahead of time and stored in the refrigerator for up to one week.
