Ingredients

  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup mayonnaise
  • 1 cup water
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13 inch baking pan or prepare your slow cooker with a liner.
  3. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  4. Add the mayonnaise, water, and vanilla extract to the dry ingredients. Mix until just combined; do not overmix.
  5. Pour the batter into the prepared pan or slow cooker.
  6. For oven baking, bake for 30-35 minutes or until a toothpick comes out clean. For the slow cooker, cook on high for 2-3 hours.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store covered at room temperature for up to 3 days or refrigerate for up to a week. Reheat individual slices in the microwave for about 10-15 seconds.
