Ingredients

Scale
  • 1 refrigerated pie crust (store-bought or homemade)
  • 1 cup corn syrup
  • 1 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 1 cup pecans, roughly chopped
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 tablespoon molasses
  • 1 tablespoon bourbon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust: Roll out the pie crust and fit it into a 9-inch pie pan. Trim the edges and set aside.
  3. Mix the filling: In a large bowl, whisk together corn syrup, brown sugar, eggs, vanilla extract, and melted butter until smooth.
  4. Add in pecans and chocolate: Fold in the chopped pecans and chocolate chips, ensuring they are evenly dispersed.
  5. Pour and bake: Pour the filling into the prepared crust. Bake for 50-60 minutes or until the filling is set (slightly jiggly but not liquid). Allow to cool completely.
  6. Make the whipped cream: In a mixing bowl, combine heavy cream, powdered sugar, molasses, and bourbon. Beat until soft peaks form.
  7. Serve: Slice the pie and dollop or drizzle the molasses bourbon whipped cream on top before serving.
