Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 1 cup fresh or frozen raspberries
  • ¼ cup granulated sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine flour, oats, brown sugar, and a pinch of salt.
  3. Pour in the melted butter and stir until the mixture is crumbly.
  4. Press half of the mixture into the bottom of the lined pan to form the base layer.
  5. In another bowl, combine raspberries and granulated sugar. Carefully mash them with a fork until slightly broken down.
  6. Spread the raspberry mixture evenly over the crumb layer in the pan.
  7. Sprinkle the remaining crumb mixture over the raspberry layer and bake for 25–30 minutes or until golden brown.
  8. Once it’s cooled, melt the chocolate chips and drizzle over the top before cutting into squares.

Notes

These bars freeze well; cut them into squares and wrap individually for a quick treat later.
