Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon peppermint extract
  • ½ cup crushed candy canes

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients into the wet mixture, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough and roll them into balls, spacing them a few inches apart on the prepared baking sheet.
  7. Sprinkle the crushed candy canes on top of each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
