Ingredients

  • 8 slices of thick-cut bread (brioche or Texas toast)
  • 4 large eggs
  • 1 cup whole milk (or non-dairy milk)
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • Sugar (for coating, mix of granulated sugar and cinnamon)
  • Butter (for cooking)

Instructions

  1. In a small bowl, combine about ½ cup of granulated sugar with 1 tablespoon of cinnamon to make the churro filling.
  2. In a separate medium bowl, whisk together eggs, milk, vanilla extract, brown sugar, and remaining cinnamon until smooth.
  3. Create a pocket in each slice of bread and fill it with about 2 tablespoons of the sugar mixture.
  4. Melt butter in a frying pan over medium heat. Dip each stuffed slice into the egg mixture and shake off excess custard.
  5. Cook stuffed slices in the pan for 3-4 minutes on each side until golden brown.
  6. Remove from the pan and roll each slice in the cinnamon sugar mixture.
  7. Serve warm with maple syrup, fresh berries, or whipped cream.

Notes

Perfect for brunch, it can be served warm with syrup or ice cream for dessert. Adjust the spices for your preference!
