Ingredients

  • 8 slices of bread (white, whole wheat, or gluten-free)
  • 2 large eggs
  • 1/2 cup milk (or almond/oat milk for dairy-free)
  • 1 tablespoon cinnamon
  • 2 tablespoons sugar
  • 2 tablespoons butter (for frying)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Flatten each slice of bread to about 1/4 inch thick with a rolling pin.
  2. In a mixing bowl, combine sugar, cinnamon, and optional vanilla extract. Mix well.
  3. In another bowl, whisk together eggs and milk until smooth.
  4. Spread the cinnamon-sugar mixture onto each flattened bread slice and roll them up tightly.
  5. Heat a skillet over medium heat and melt butter. Cook the roll-ups seam side down until golden brown, about 2-3 minutes on each side.
  6. Roll the cooked roll-ups in the remaining cinnamon-sugar mixture and serve warm.
