Instructions

  1. Preheat the oven to 425°F (220°C) or your air fryer to 400°F (200°C).
  2. Peel and cube the sweet potatoes into even pieces for uniform cooking.
  3. In a large bowl, combine maple syrup, olive oil, cinnamon, salt, and nutmeg. Stir until well mixed.
  4. Add the sweet potato cubes to the bowl and toss until they are evenly coated with the maple mixture.
  5. For the oven: Spread the coated sweet potatoes on a baking sheet in a single layer. Roast for about 25-30 minutes or until tender and caramelized, flipping halfway through.
  6. For the air fryer: Place the sweet potatoes in the air fryer basket. Cook for 15-20 minutes, shaking the basket halfway through for even cooking.
  7. Once cooked, remove from the oven or air fryer and sprinkle with fresh parsley if desired.

Notes

You can substitute honey or agave syrup for maple syrup, and adjust the spices to your taste.
