Ingredients

  • 1 tsp baking powder
  • 1 tsp ground cinnamon

  • ยฝ cup unsalted butter, softened
  • ยฝ cup granulated sugar
  • ยฝ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ยฝ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. In a bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon until well blended.
  3. In another bowl, cream the softened butter with the granulated sugar and packed brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth and well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Prepare the filling by combining the packed brown sugar and ground cinnamon in a small bowl.
  7. Spread half of the cookie dough onto parchment paper into a rectangle. Sprinkle the filling evenly over the dough, then roll it up tightly using the parchment paper.
  8. Slice the rolled dough into rounds about ยฝ inch thick and place on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until golden brown. Allow to cool slightly before serving.

Notes

To easily slice the rolled dough, use a sharp knife that is slightly warmed.
