Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • Cream cheese frosting (store-bought or homemade)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, combine the milk, melted butter, eggs, and vanilla extract. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Don’t overmix!
  5. In a small bowl, combine the brown sugar and additional cinnamon to create the cinnamon sugar swirl.
  6. Fill each muffin cup about halfway with the batter. Add a teaspoon of the cinnamon sugar mixture into each cup, then top with remaining batter.
  7. Bake for 18-22 minutes or until golden brown and a toothpick inserted comes out clean. Allow to cool slightly before drizzling with cream cheese frosting.

Notes

Store leftovers in an airtight container for up to a week or freeze for up to 3 months.
