Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • ¾ cup buttermilk
  • ½ cup unsalted butter (melted)
  • 1 large egg
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin or line it with paper liners.
  3. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and 1 tsp of cinnamon.
  4. In a separate bowl, whisk buttermilk, melted butter, and egg until combined.
  5. Gradually mix the wet ingredients into the dry ingredients until just combined.
  6. In a small bowl, combine brown sugar and 1 tbsp cinnamon for the filling.
  7. Spoon batter into muffin cups, layering with cinnamon-sugar mixture as directed.
  8. Bake for 18–20 minutes until golden brown.
  9. Allow to cool for 5 minutes in the tin before transferring to a wire rack.

Store leftovers in an airtight container for up to 3 days or freeze for a month.
