  • 2 cups brown sugar, packed
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

  • ½ teaspoon salt
  • Topping: ¼ cup granulated sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish or line it with parchment paper.
  3. Cream together the softened butter and brown sugar until light and fluffy, about 2-4 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, ground cinnamon, and salt.
  6. Fold the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared baking dish and smooth the top.
  8. Sprinkle the sugar and cinnamon mixture over the batter.
  9. Bake for about 25-30 minutes until golden brown and a toothpick inserted comes out with a few moist crumbs.
