Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup cinnamon-sugar mixture (1/4 cup sugar + 1 tablespoon cinnamon for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper or a silicone mat.
  3. In a medium mixing bowl, whisk together the flour, baking soda, cream of tartar, salt, and cinnamon until combined.
  4. Cream the softened butter and granulated sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
  5. Add the eggs and vanilla extract to the creamed mixture, mixing until smooth.
  6. Gradually stir in the dry ingredients, mixing until just combined.
  7. Roll the dough into 1-inch balls and coat them in the cinnamon-sugar mixture.
  8. Place the balls on the prepared baking sheets about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden; let cool for 5 minutes on the baking sheet before transferring to a wire rack.
