Instructions

  1. Preheat your oven to 425°F (220°C). Roll out the pie crust and place it in a 9-inch pie pan. Bake for about 10-12 minutes, or until golden brown. Let it cool.
  2. In a saucepan, mix 1 cup sugar, cornstarch, and salt. Stir in the water and bring to a boil over medium heat. Add egg yolks and mix well, then add lemon juice and zest. Cook until thickened and bubbly, about 5 minutes.
  3. Pour the lemon filling into the baked pie crust and spread it evenly.
  4. In a clean bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add remaining sugar and continue beating until stiff peaks form.
  5. Spread the meringue over the hot lemon filling, ensuring it touches the crust to prevent shrinking.
  6. Bake in the oven for about 10 minutes, or until the meringue is lightly golden. Keep an eye on it to prevent burning.
