Ingredients

Scale
  • 2 cups fresh strawberries (washed and hulled)
  • 2 tablespoons unflavored gelatin
  • 1 cup water or fruit juice
  • Optional sweeteners (honey or agave syrup)

Instructions

  1. Prepare the strawberries by washing and hulling them.
  2. Blend the strawberries until smooth, leaving some chunks if desired.
  3. In a small pot, heat 1 cup of water until near boiling, then remove from heat and stir in the gelatin until dissolved.
  4. Add the strawberry puree or juice to the gelatin mixture and stir until combined.
  5. Taste and add sweeteners if desired, stirring until dissolved.
  6. Pour the mixture into a mold or bowl and refrigerate for 4 hours until set.
  7. Once set, scoop or slice and enjoy cold, optionally adding fresh strawberries on top.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week.
