Ingredients

  • 1 cup pecans, toasted and roughly chopped
  • 1 cup unsweetened shredded coconut
  • 1/2 cup coconut milk (full-fat for creaminess)
  • 1/4 cup maple syrup or honey (to taste)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Lightly grease the insert of your slow cooker.
  2. In the slow cooker, combine the toasted pecans, shredded coconut, coconut milk, maple syrup or honey, vanilla extract, and a pinch of salt.
  3. Cover and cook on low for 120 minutes, stirring occasionally.
  4. After cooking, use an immersion blender to blend until you reach your desired consistency.
  5. Taste the spread and add more sweetener if needed, stirring to combine.
  6. Let the spread cool for a few minutes before transferring it to a jar or airtight container.
  7. Allow it to cool completely before sealing for storage.

Notes

Store in an airtight container in the fridge for up to two weeks. Can be frozen for up to three months.
