Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • ½ cup brewed coffee, cooled

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the cooled coffee.
  6. Drop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are lightly golden.
  8. Allow to cool on the baking sheet before transferring to a wire rack.

Notes

Store cooled cookies in an airtight container at room temperature for 3-4 days or refrigerate for a week.
