Ingredients

Scale
  • 1 cut of steak (ribeye, sirloin, or filet mignon)
  • ½ cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Juice of ½ lemon
  • Spices: paprika, salt, and pepper to taste
  • 1 tablespoon cooking oil

Instructions

  1. Prepare the Cowboy Butter: In a medium bowl, combine softened butter, minced garlic, parsley, rosemary, and lemon juice. Mix well and set aside.
  2. Season the Steak: Sprinkle steak with salt, pepper, and paprika on both sides. Let sit at room temperature for 15 minutes.
  3. Preheat the Skillet: Heat oil in a heavy skillet over medium-high heat until shimmering.
  4. Cook the Steak: Sear steak for 3-4 minutes on one side until a crust forms, then flip.
  5. Add Cowboy Butter: After flipping, add cowboy butter and baste the steak with the melted butter. Cook for 3-5 minutes more for medium-rare.
  6. Check Doneness: Use a meat thermometer to check for 130°F for medium-rare. Remove from heat and let rest for 5 minutes.
  7. Serve: Slice against the grain, drizzle with remaining cowboy butter, and enjoy warm.

Notes

Leftover cowboy butter can be frozen for later use. Adjust spices according to taste preferences.
