Ingredients

  • 1 lb breakfast sausage
  • 6 large eggs
  • 2 cups shredded cheddar cheese
  • 3 cups frozen hash browns
  • 1 bell pepper, diced
  • 1 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the sausage until browned, about 5-7 minutes. Drain excess grease and let cool slightly.
  3. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until light and frothy.
  4. Add the cooked sausage, hash browns, bell pepper, and half of the shredded cheese to the egg mixture. Stir until evenly coated.
  5. Grease a 9×13-inch baking dish and pour the mixture into it, spreading it evenly. Sprinkle the remaining cheese on top.
  6. Bake for 30-35 minutes, or until edges are golden and the center is set.
  7. Let the casserole rest for 10 minutes before slicing into squares.
