Ingredients

  • Boneless, skinless chicken breasts
  • Brie cheese
  • Cranberry sauce
  • Fresh thyme
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C) or air fryer to 350°F (175°C).
  2. Place each chicken breast between two sheets of plastic wrap and pound to about ¼ inch thick.
  3. Sprinkle salt and pepper on both sides of the chicken.
  4. Place a generous slice of Brie and about 2 tablespoons of cranberry sauce in the center of each breast, folding the chicken over to encase the filling.
  5. Use toothpicks or kitchen twine to secure the stuffed chicken.
  6. In a hot skillet, add olive oil and sear the chicken for 2-3 minutes on each side until lightly browned.
  7. Transfer the chicken to the oven or air fryer. Bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes before serving, remove the toothpicks or twine, garnish with fresh thyme, and enjoy!
