Ingredients

Scale
  • 4 chicken breasts or thighs
  • 1 cup cranberry sauce
  • 1/2 cup fresh orange juice
  • 1 tablespoon fresh orange zest
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Rinse the chicken breasts or thighs under cold water and pat them dry with a paper towel.
  2. In a mixing bowl, combine cranberry sauce, orange juice, orange zest, soy sauce, minced garlic, salt, and pepper. Stir until well blended.
  3. Place the chicken in a resealable plastic bag or a shallow dish and pour the marinade over, ensuring the chicken is well coated. Marinate for at least 30 minutes in the refrigerator.
  4. For the slow cooker, transfer marinated chicken and any remaining marinade and cook on low for 4-6 hours or high for 2-3 hours. For the air fryer, preheat to 360°F and cook for about 20-25 minutes, flipping halfway through.
  5. Check for doneness with a meat thermometer until the internal temperature reaches 165°F.
  6. Transfer the chicken to a serving plate, drizzle sauce on top, and garnish with fresh herbs.

Notes

For a healthier version, swap chicken for tofu for a vegetarian twist. Store leftovers in an airtight container in the refrigerator for up to 3 days.
