Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  4. In another bowl, whisk together the rolled oats, flour, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  6. Fold in the dried cranberries and walnuts until evenly distributed.
  7. Scoop spoonfuls of dough onto lined baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are golden.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Use quick oats instead of rolled oats for a different texture.
