  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine the rolled oats, all-purpose flour, baking soda, cinnamon, and salt in a mixing bowl.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined and smooth.
  5. Add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in the dried cranberries and chopped walnuts until evenly distributed.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 10 to 12 minutes or until edges are golden brown.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to 4 days. Freezing is an option for longer storage.
