  • 23 medium yellow squash
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream or Greek yogurt
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 1 clove garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the yellow squash and slice them into thin rounds (about 1/4 inch thick).
  3. In a large skillet over medium heat, add olive oil and sauté the sliced squash and minced garlic for about 5–7 minutes until tender.
  4. In a mixing bowl, combine shredded cheddar cheese, sour cream (or Greek yogurt), eggs, salt, and pepper; mix until creamy.
  5. In a greased baking dish, layer the sautéed squash, pour the cheese mixture over, and spread evenly.
  6. Sprinkle the breadcrumbs on top.
  7. Bake for 30–35 minutes until bubbly and golden brown.
