Ingredients

  • 1 lb Chicken Breast
  • ½ cup Sundried Tomatoes
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 tsp Dried Thyme
  • 1 tsp Dried Basil
  • Salt and Pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil and sauté onion until translucent, about 3-5 minutes.
  2. Add garlic and cook for another minute, then add chicken pieces and brown slightly for 5-7 minutes.
  3. Pour in chicken broth and sundried tomatoes, bring to a gentle simmer.
  4. Stir in dried thyme and basil, and let simmer for 20 minutes.
  5. Remove chicken, shred, then return to the pot along with heavy cream and heat through for 5 minutes.
  6. Season with salt and pepper, ladle into bowls, and garnish if desired.

Notes

For a dairy-free version, substitute heavy cream with coconut milk. Feel free to add vegetables for extra nutrition.
