Ingredients

  • 6 boneless, skinless chicken thighs
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small yellow onion, finely chopped
  • 6 cloves garlic, minced
  • 1/3 cup chicken broth
  • 1/2 cup cooked crispy bacon, diced
  • 1 cup heavy cream
  • 3/4 cup milk
  • 1 tablespoon Italian seasoning
  • 1 teaspoon oregano
  • A pinch crushed chili pepper flakes
  • 3 cups baby spinach leaves
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Season the chicken thighs with salt and black pepper on both sides and let them sit for a few minutes.
  2. Heat a skillet over medium-high heat and add olive oil. Add the chicken thighs and sear for 5 to 8 minutes per side until golden and cooked through. Remove the chicken and set aside.
  3. Melt the butter in the same skillet, add chopped onion and garlic, and sauté for 1 minute until fragrant.
  4. Pour in the chicken broth and reduce the heat to low. Add the bacon and cook for 1 to 2 minutes.
  5. Whisk in heavy cream and milk, then stir in Italian seasoning, oregano, and chili flakes, adjusting salt and pepper to taste.
  6. Fold in the spinach until wilted, then add Parmesan cheese until smooth.
  7. Whisk cornstarch with water to make a slurry, then stir into the skillet until thickened.
  8. Return the chicken to the skillet and simmer briefly until heated through. Serve immediately with extra sauce and spinach.

Notes

For best flavor, dry the chicken before seasoning and use fresh grated Parmesan.
