Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 12 oz bowtie pasta, dried
  • 4 garlic cloves, minced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • Fresh parsley, chopped

Instructions

  1. Cook the bowtie pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside. Reserve a cup of pasta water.
  2. Heat the olive oil and butter in a large skillet over medium heat until the butter melts.
  3. Add the minced garlic and cook until fragrant, about 30 to 60 seconds, stirring constantly.
  4. Season the diced chicken with salt, pepper, and Italian seasoning, then add to the skillet. Cook until the chicken is browned and cooked through, about 6 to 8 minutes.
  5. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
  6. Add the grated Parmesan and stir until it melts and the sauce is smooth. If it’s too thick, add a splash of reserved pasta water.
  7. Combine the cooked bowtie pasta with the sauce, tossing to coat evenly. Heat through for a few additional minutes.
  8. Garnish with freshly chopped parsley and serve hot.

Notes

Dice chicken into uniform pieces for even cooking. Reserve pasta water for thinning the sauce if necessary.
