  • 8 oz pasta of your choice (penne, fettuccine, or spaghetti)
  • 1 lb chicken breast, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and sauté for about 5-7 minutes until cooked through.
  3. Reduce heat to low, add minced garlic to the skillet, and cook for an additional 1-2 minutes until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted. Adjust thickness with reserved pasta water if necessary.
  5. Add the cooked pasta to the skillet and toss until evenly coated in the sauce. Adjust seasoning to taste.
  6. Serve immediately, optionally garnished with extra Parmesan and fresh herbs.

Notes

For a healthful twist, consider adding fresh spinach or swapping pasta for whole-grain options.
