Ingredients

  • 1 pound Gnocchi
  • 4 cups Fresh Spinach
  • 1 cup Feta Cheese, crumbled
  • 1 cup Heavy Cream
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil

Instructions

  1. Cook the Gnocchi in a pot of salted boiling water according to package instructions until they float, about 2-3 minutes. Drain and toss with olive oil.
  2. Sauté the garlic in olive oil over medium heat for 1 minute until fragrant; add the spinach and cook until wilted, about 2-3 minutes.
  3. Add the heavy cream to the sautéed garlic and spinach, simmer for 2-3 minutes.
  4. Gently fold the cooked gnocchi into the creamy mixture.
  5. Stir in the crumbled feta cheese until melted and fully incorporated.
  6. Season with salt and pepper to taste, and serve warm.
