Ingredients

  • 1 lb turkey sausage, sliced
  • 1 lb boneless, skinless chicken breasts, diced
  • 12 oz rotini or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded Pepper Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

Instructions

  1. Heat the pot and aromatics: In a large pot, heat 1 tablespoon olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  2. Add the meats: Add the sliced sausage and diced chicken to the pot, cooking until the chicken is no longer pink.
  3. Season the mix: Stir in 1 teaspoon Italian seasoning, and season with salt and black pepper to taste.
  4. Add the broth and simmer: Pour in 2 cups chicken broth and bring to a simmer.
  5. Cook the pasta in the pot: Stir in the 12 oz pasta and cook according to package instructions until al dente.
  6. Finish with cream and cheese: Reduce the heat to low, and mix in 1 cup heavy cream, 1 1/2 cups shredded Pepper Jack cheese, and 1/2 cup grated Parmesan cheese.
  7. Serve hot: Serve hot, garnished with additional cheese if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently with broth or milk to loosen the sauce.
