Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup peeled and diced tart apples
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. Cream together the softened butter and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, combine rolled oats, flour, cinnamon, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Fold in the diced apples and any optional add-ins.
  6. Scoop the dough onto parchment-lined air fryer trays, spacing them about 2 inches apart.
  7. Cook in the air fryer for 8-10 minutes or until edges are golden and tops look set. Allow cookies to cool slightly before transferring to a wire rack.

Notes

Store cookies in an airtight container in the refrigerator for up to one week. To refresh their crispiness, warm them in the air fryer for about 2-3 minutes.
