Ingredients

  • 2 lbs of Russet or Yukon Gold potatoes
  • 1 cup of grated Parmesan cheese
  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of dried Italian herbs (optional)

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. Wash and peel the potatoes, then cut them into 1-inch cubes.
  3. Drizzle olive oil over the potatoes, add minced garlic, salt, pepper, and herbs. Toss well to coat.
  4. Sprinkle grated Parmesan cheese over the coated potatoes and mix gently.
  5. Spread the potatoes in a single layer on a lined baking sheet.
  6. Bake for 25-30 minutes, tossing halfway through until golden and crispy.
  7. Let cool for a few minutes and enjoy!

Notes

For a spicy version, add red pepper flakes to the seasoning. Store leftovers in an airtight container in the refrigerator for up to three days.
