Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (can substitute with almond milk)
  • 2 large eggs
  • 1/4 cup melted butter or vegetable oil

Instructions

  1. Grease the inside of your crockpot with cooking spray or melted butter.
  2. In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt. Whisk until well combined.
  3. Stir in the milk, eggs, and melted butter until blended, being careful not to overmix.
  4. Transfer the batter to your prepared crockpot.
  5. Cover and cook on high for 2 to 3 hours or on low for 4 to 5 hours, until a toothpick inserted in the center comes out clean.
  6. Let it cool for 10 minutes before slicing. Serve warm and enjoy!

Notes

For extra flavor, consider adding shredded cheese, cooked bacon, or jalapeños. Store leftovers in an airtight container.
