Ingredients

  • 1.5 lbs chicken breasts (boneless, skinless)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 packet of fajita seasoning (or homemade)
  • 1 can (15 oz) diced tomatoes (drained)
  • Juice of 1 lime (freshly squeezed)
  • Salt and pepper to taste
  • Tortillas (to serve)
  • Optional toppings: sour cream, guacamole, cheese, cilantro

Instructions

  1. Prepare the Ingredients: Slice the bell peppers and onion into thin strips.
  2. Arrange in Crockpot: Place the chicken breasts at the bottom of the crockpot. Layer the sliced veggies on top.
  3. Add Flavor: Sprinkle the fajita seasoning over the chicken and veggies. Pour in the drained diced tomatoes and lime juice.
  4. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through and tender.
  5. Shred the Chicken: Once cooked, remove the chicken from the crockpot and shred it using two forks. Return the chicken to the crockpot, stirring everything together.
  6. Taste and Adjust: Season with salt and pepper to taste if necessary.
  7. Serve: Spoon the chicken fajitas mixture into warm tortillas or over rice, and top with your favorite garnishes.

Notes

You can substitute chicken for turkey or adjust spices for desired heat level. Leftovers can be stored in the fridge for up to 3 days.
